- 2 tablespoons rice syrup (oligodang) (approx. 20g)

Cooking Instructions
Step 1
Begin by preparing your fresh raw peanuts. Gently rinse them in cool water to remove any dirt or debris. Be careful not to scrub too vigorously, as this can wash away some of their natural nutty flavor.

Place the rinsed peanuts in a pot and add enough water to cover them generously. Bring the water to a rolling boil over high heat, then let the peanuts simmer for about 5 minutes to lightly cook them.

After blanching, drain all the water from the pot. This step helps to remove any raw, grassy taste from the peanuts, resulting in a cleaner flavor in the final dish.

Now, let’s prepare the delicious braising liquid. In the same pot, combine 50cc soy sauce, 300cc water, 2 tablespoons sugar, and 2 tablespoons rice syrup. Stir well to dissolve the sugar. Add the blanched peanuts to this mixture. You might think there’s a lot of liquid, but as the peanuts cook and the liquid reduces, this amount is perfect. It’s better to start with a slightly less salty mixture, as the flavor will concentrate as it simmers.

Reduce the heat to medium-low and begin to simmer. Cover the pot and stir the peanuts occasionally to ensure they cook evenly and absorb the flavor. It’s important to check the liquid level periodically. Let this simmer for about 15-20 minutes.

As the liquid starts to thicken and reduce, remove the lid and continue to simmer over low heat, stirring frequently. You can reduce the liquid to your desired consistency; a slightly glossy finish is often preferred over completely dry. Finally, sprinkle with toasted sesame seeds for an extra nutty aroma.
