Main Ingredients- 500g fresh baby octopus
- 1 red chili pepper
- 1 Korean green chili pepper (cheongyang chili)
- 1/2 medium onion
- 1/4 carrot
- 1 tablespoon all-purpose flour (for cleaning the octopus)
Sauce Ingredients- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon corn syrup or oligosaccharide
- 1 tablespoon cooking wine (mirin or rice wine)
- 1 tablespoon minced garlic
- 1/2 tablespoon sesame oil
- Pinch of black pepper
- A sprinkle of toasted sesame seeds (crushed)
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon corn syrup or oligosaccharide
- 1 tablespoon cooking wine (mirin or rice wine)
- 1 tablespoon minced garlic
- 1/2 tablespoon sesame oil
- Pinch of black pepper
- A sprinkle of toasted sesame seeds (crushed)
Cooking Instructions
Step 1
First, prepare the vegetables. Slice the onion into thin strips about 0.5cm thick. Cut the carrot into thin half-moon shapes, about 0.3cm thick. Remove the stems from the red and green chili peppers and slice them diagonally into about 0.5cm thick pieces. (If you enjoy a bit of heat, feel free to increase the amount of Korean green chili peppers).
Step 2
Now, let’s clean the baby octopus. Place the cleaned baby octopus in a bowl and add 1 tablespoon of all-purpose flour. Gently knead and rub the octopus with the flour. This step helps to remove the slimy texture and any impurities. Rinse the octopus thoroughly under cold running water multiple times until clean. Drain the octopus well in a colander.
Step 3
Let’s make the delicious soy sauce marinade! In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of sugar, 1 tablespoon of corn syrup (or oligosaccharide), 1 tablespoon of cooking wine, 1 tablespoon of minced garlic, 1/2 tablespoon of sesame oil, and a pinch of black pepper. Whisk everything together until well combined to create a flavorful sauce.
Step 4
Now, let’s start stir-frying! Heat 1 to 2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onions and stir-fry until they become translucent. Sautéing the onions first will bring out their natural sweetness and enhance the overall flavor.

Once the onions start to turn translucent, add the prepared carrots and the cleaned baby octopus to the pan. Stir-fry them together. Be careful not to overcook the baby octopus, as it can become tough. Cook just until the octopus changes color, then proceed to the next step.
Step 6
As soon as the octopus changes color, pour in all the prepared soy sauce marinade. Stir-fry quickly for about 1 to 2 minutes, ensuring the sauce evenly coats the octopus and vegetables. Finally, add the diagonally sliced red and green chili peppers and stir-fry for another moment to finish. Sprinkle with crushed toasted sesame seeds for garnish, if desired. This dish is wonderful served over rice as a donburi, or enjoyed with fresh lettuce wraps!
