Smoked Duck Kimbap Recipe: Ideal for Autumn Picnics and Sports Day Lunches
With the beautiful, sunny autumn weather, it’s the perfect time for picnics! This kimbap, generously filled with nutritious smoked duck, is an ideal choice for school field trips or autumn sports day lunches. I made this smoked duck kimbap for my son’s sports day lunch, and its abundant ingredients and delicious seasoning made it a hit with both kids and adults. It’s a truly satisfying lunchbox menu!
Kimbap Ingredients- 1 pack smoked duck (sliced)
- 3 bowls cooked rice
- 3 sheets of kimbap seaweed
- Generous amount of lettuce
- 1/2 carrot
- 1 handful spinach
- 2 eggs
- Some pickled radish
- 2 imitation crab sticks
Smoked Duck Seasoning- 1.5 Tbsp oyster sauce
- 2 Tbsp plum extract
- 1 Tbsp cooking wine (cheongju)
- 1.5 Tbsp oyster sauce
- 2 Tbsp plum extract
- 1 Tbsp cooking wine (cheongju)
Cooking Instructions
Step 1
The smoked duck comes conveniently pre-sliced in its packaging, making it very easy to cook. You can heat it up or roast it using a pan, steamer, microwave, or oven for a delicious result.
Step 2
In a pan, stir-fry the sliced smoked duck. Add 1.5 tablespoons of oyster sauce and 2 tablespoons of plum extract, and continue to cook. After stir-frying, drain the excess oil using a sieve. This step is crucial for a clean, non-greasy flavor.
Step 3
Blanch the spinach in boiling water, then rinse with cold water and squeeze out any excess moisture before chopping. Beat the eggs and cook them into thin omelets, then julienne them finely. Julienne the carrot and lightly stir-fry it. Shred the imitation crab sticks lengthwise. Wash the lettuce thoroughly, drain well, and tear it into large pieces.
Step 4
To the fluffy cooked rice, add a little sesame oil, a pinch of salt, and toasted sesame seeds. Mix well to combine. The rice should be seasoned lightly, tasting pleasantly plain on its own, as this will complement the other ingredients in the kimbap. (I cooked a large pot of rice early in the morning to prepare lunchboxes for my son and his friends! ㅎㅎ)
Step 5
Spread the seasoned rice thinly and evenly over a sheet of kimbap seaweed, leaving about a 2cm border at the top edge to prevent the rice from spilling out when rolled. Layer the lettuce on top of the rice, followed by the stir-fried smoked duck and all the other prepared kimbap fillings. Start rolling tightly from the bottom edge, ensuring the fillings are well-contained. Once rolled, use a kimbap mat to gently press and shape the roll firmly.
Step 6
And there you have it – beautifully made smoked duck kimbap, packed with generous, delicious fillings! Arrange them nicely in your lunchbox and enjoy.
