Reviving frozen sigeagi (dried radish greens) to create a delicious side dish! This stir-fry is a perfect accompaniment to a home-cooked meal, bringing out the rich, earthy flavors of sigeagi with a savory doenjang base.

Main Ingredients

  • 1 bunch (approx. 150g) frozen sigeagi (dried radish greens)
  • 1/4 stalk green onion
  • 1 Korean chili pepper
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • Pinch of sesame seeds

Seasoning

  • 1 Tbsp doenjang (Korean soybean paste)
  • 1 Tbsp tuna extract (or soy sauce for soup)
  • 1 tsp minced garlic
  • 1 tsp dried anchovy powder (or kelp powder)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, thaw the frozen sigeagi by soaking it in cold water. Once thawed, cut the sigeagi into bite-sized pieces, about 5cm long. In a large bowl, combine the prepared sigeagi with all the seasoning ingredients: 1 Tbsp doenjang, 1 Tbsp tuna extract, 1 tsp minced garlic, 1 tsp anchovy powder, and 1 Tbsp sesame oil for seasoning.

Gently mix and massage the seasoning into the sigeagi with your hands until well combined. Be careful not to overwork it. For best flavor, let it marinate for about 5 minutes.

Finely chop the green onion. Remove the seeds from the Korean chili pepper and mince it finely. If you prefer more heat, you can increase the amount of chili pepper or use a regular green chili pepper.

Heat 1 Tbsp of cooking oil in a wok or deep pan over medium-high heat. Add the marinated sigeagi and stir-fry quickly for 1-2 minutes until it becomes fragrant and slightly cooked.

Pour in 1/3 cup (approx. 60ml) of water. Bring it to a boil over high heat, then reduce to medium-low heat and simmer until the sigeagi is tender.

Once the liquid has reduced to a simmer, add the chopped green onion and minced chili pepper. Stir-fry together for another 1-2 minutes until the ingredients are well incorporated. Aim for a moist consistency; avoid letting it dry out completely.

Finally, just before turning off the heat, drizzle in 1 Tbsp of sesame oil and sprinkle with sesame seeds. Your delicious and aromatic Sigeagi Namul Stir-Fry with Doenjang is ready! Enjoy it with a bowl of hot rice.
