  • 1.5 Tbsp sweet oligosaccharide (or honey/corn syrup)
  • A little toasted sesame oil
  • 1 Tbsp toasted sesame seeds

Start by preparing your fresh shiitake mushrooms. Gently rinse them under running water to remove any dirt or debris. If the mushrooms are clean, you can simply wipe them with a paper towel to remove excess moisture instead of washing. Using prepped mushrooms this way can yield a better texture.
