While delicious when dried, fresh shiitake mushrooms stir-fried to a fragrant finish offer a delightful chewy texture and deep umami flavor. Make this crowd-pleasing shiitake mushroom stir-fry easily!
Main Ingredients- 7-12 fresh shiitake mushrooms (choose fresh ones)
- 1/2 medium onion
- 1-2 Korean green chili peppers (add more for extra spice)
Seasoning- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp oligosaccharide (adjust sweetness as desired)
- 1 tsp minced garlic

Cooking Instructions
Step 1
First, prepare the fresh shiitake mushrooms. Gently shake them under running water to remove any dirt or debris, being careful not to damage the underside of the caps. Avoid scrubbing too hard.
Step 2
Trim the tough stem parts of the shiitake mushrooms with scissors. This helps to preserve the fresh texture of the mushroom caps, so cut them carefully.
Step 3
Don’t discard the stems; they can be stir-fried along with the mushrooms! Cut the shiitake mushroom caps into 6-7 bite-sized pieces. Cutting them too small might cause them to break apart during cooking.
Step 4
Thinly slice half a medium onion into strips. Slice 1-2 Korean green chili peppers diagonally. If you prefer a spicier dish, increase the number of chilies or leave the seeds in.
Step 5
Heat 1-2 Tbsp of cooking oil in a pan. Add the sliced onion and chili peppers and stir-fry over low heat. At this stage, add all the seasoning ingredients: 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp oligosaccharide, and 1 tsp minced garlic. Stir-frying them together will help the flavors meld into the ingredients.
Step 6
Once the onions become slightly translucent and begin to soften, add all the prepared shiitake mushrooms to the pan.
Step 7
Add the shiitake mushrooms and stir-fry quickly over low heat until well combined. Avoid overcooking, as shiitake mushrooms can become tough. Stir-fry just until they soften to maintain a pleasant chewy texture.
Step 8
Finally, sprinkle some toasted sesame seeds over the finished stir-fry for a beautiful garnish. Your delicious shiitake mushroom stir-fry is ready! It makes a wonderful side dish to enjoy with a hot bowl of rice.
