First, remove the tough stems from the shiitake mushrooms and use only the caps. Clean the mushroom caps thoroughly. Slice the shiitake mushrooms into strips about 0.5cm thick. Thinly slice the onion and diagonally slice the green onion. Mince the garlic into thin slices. Prepping all the ingredients like this beforehand will make the stir-frying process much smoother.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the prepared green onion, onion, and sliced garlic. Stir gently, being careful not to burn them, until the vegetables release their aroma. This step infuses the dish with a subtle sweetness and savory flavor from the vegetables.
