Here’s a delightful savory and slightly sweet radish stir-fry made with just a piece of radish, packed with rich umami flavor thanks to perilla seeds. Main Ingredients- 400g Radish
- 1/2 stalk Green Onion
- 100ml Water
Seasoning- 2 Tbsp Perilla Oil
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Anchovy Sauce (or Fish Sauce)
- 1-2 Tbsp Perilla Seed Powder
- 1/2 Tbsp Toasted Sesame Seeds
For Salting Radish- 1/2 Tbsp Coarse Salt
- 2 Tbsp Perilla Oil
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Anchovy Sauce (or Fish Sauce)
- 1-2 Tbsp Perilla Seed Powder
- 1/2 Tbsp Toasted Sesame Seeds
For Salting Radish- 1/2 Tbsp Coarse Salt
Cooking Instructions
Step 1
First, prepare the radish. Wash the radish thoroughly and slice it thinly, about 0.3cm thick. Then, cut the sliced radish into long, matchstick-like strips of the same thickness.
Step 2
Place the julienned radish in a bowl and add 1/2 Tbsp of coarse salt. Mix well by gently massaging the radish. Let it sit for 20 minutes to salt the radish. Salting helps soften the radish and draw out excess moisture, making it tender.
Step 3
After 20 minutes, gently squeeze out the water released from the radish. Heat 1 Tbsp of perilla oil in a pot over medium-low heat. Add the squeezed radish and begin to stir-fry it. Be sure to manage the heat well to prevent the radish from burning and ensure it cooks beautifully.
Step 4
Once the radish surfaces look slightly translucent, add 1/2 Tbsp of minced garlic, 1 Tbsp of anchovy sauce, and 100ml of water. Stir everything together, then cover the pot with a lid and let it simmer for about 10 minutes to cook the radish. This simmering process will make the radish tender and infuse it with flavor.
Step 5
While the radish is cooking, finely chop the green onion. The fresh aroma of the green onion will add another layer of deliciousness to the radish side dish.
Step 6
After 10 minutes, remove the lid. The radish should be translucent and tender. With some remaining liquid, add the remaining 1 Tbsp of perilla oil, 1-2 Tbsp of perilla seed powder, 1/2 Tbsp of toasted sesame seeds, and the chopped green onion.
Step 7
Finally, gently stir-fry everything together to combine the flavors. Avoid overcooking; just a light stir is needed. Your delicious savory sesame radish stir-fry is now ready! Enjoy it with a warm bowl of rice.
