Ingredients

  • Beef (for soup) 300g
  • Dried seaweed 50g
  • Sesame oil 1 Tbsp
  • Fish sauce or soy sauce for soup 2 Tbsp
  • Water steeped with kelp, as needed (approx. 1.5-2L)
  • Minced garlic, a little (optional)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water to rehydrate it. It softens quite quickly, so about 10 minutes of soaking is sufficient. Once the seaweed is tender, rinse it thoroughly under running water multiple times until it’s clean and ready.

Cut the thoroughly rinsed seaweed into bite-sized pieces. Make sure they aren’t too long, so they are easy to eat in the soup.

Gently pat the beef dry with paper towels to remove any excess blood. Heat 1 tablespoon of sesame oil in a pot over medium heat. Add the beef and stir-fry it until it’s well browned. Cook the beef until it’s no longer pink and has developed a nice color before adding other ingredients. This step really brings out the beef’s umami flavor.

Once the beef is sufficiently stir-fried, add the prepared seaweed to the pot and continue to stir-fry together for another 1-2 minutes. Lightly sautéing the seaweed will deepen the broth’s flavor. Next, pour in plenty of water that has been steeped with kelp. While you can use anchovy broth or rice water, kelp-infused water helps enhance the natural flavors of the ingredients.

Bring the soup to a rolling boil, then reduce the heat to medium-low. Cover the pot and let it simmer for about 20 minutes, allowing the flavors from the seaweed and beef to fully infuse into the broth. Finally, season the soup with fish sauce or soy sauce for soup to taste. If you like, you can add a little minced garlic for extra aroma. Taste and adjust the seasoning with salt if needed.
