Seasoning Ingredients- 0.5 Tbsp red pepper flakes
- 0.5 Tbsp fish sauce or tuna extract
- 0.5 Tbsp allulose (or sugar)
- 0.7 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
- 0.5 Tbsp coarse salt
Seasoning Ingredients- 0.5 Tbsp red pepper flakes
- 0.5 Tbsp fish sauce or tuna extract
- 0.5 Tbsp allulose (or sugar)
- 0.7 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds (or crushed sesame seeds)
Cooking Instructions
Step 1
First, carefully inspect the scallions and remove any bruised or wilted parts. Wash them thoroughly under running water and then drain them well in a colander.
Step 2
Fill a pot with enough water to cover the scallions and add 0.5 Tbsp of coarse salt. Bring the water to a boil, then add the scallions. Immediately flip them over and blanch for just 10-20 seconds. Be careful not to over-blanch, as they will become too soft. Once blanched, quickly remove them, rinse under cold water to stop the cooking process, and drain completely in a colander.
Step 3
Place the well-drained scallions in a mixing bowl. Add 0.5 Tbsp of red pepper flakes and 0.5 Tbsp of fish sauce (or tuna extract) and gently toss to coat the scallions evenly.
Step 4
Now, add 0.5 Tbsp of allulose (you can substitute with sugar if allulose is unavailable) for a touch of sweetness, 0.7 Tbsp of sesame oil for a nutty aroma, and 1 Tbsp of toasted or crushed sesame seeds.
Step 5
Gently mix and toss the ingredients together until all the seasonings are well combined with the scallions. Avoid mixing too vigorously, as this can mash the delicate scallions. Your delicious seasoned scallion dish is now ready!
Step 6
Transfer the seasoned scallions to a serving plate. Sprinkle a little extra sesame seeds on top for a beautiful presentation. This simple side dish is now complete.
Step 7
Blanched and seasoned scallions have a wonderful crisp texture and a subtle sweetness that makes them incredibly enjoyable. While preparing scallions might seem a bit tedious, simple dishes like this seasoned salad or kimchi are fantastic additions to any home-cooked meal.
Step 8
Scallions belong to the Amaryllidaceae family and are known as a hybrid between leeks and onions. They are low in calories, approximately 27kcal per 100g, and are rich in various vitamins, particularly Vitamin A, and minerals. These nutrients can help prevent various adult diseases, and their abundant fiber content promotes healthy digestion and aids in relieving constipation.
