Tired of the same old lunchbox options? Break free from the usual Jeyuk Bokkeum and embark on a culinary adventure with this new seasoned pork and potato stir-fry! After searching various recipes, I’ve developed a marinade that perfectly suits my taste. I’m already looking forward to tomorrow’s lunch! I purchased the pork and garlic from Wegmans in the US, and the rest of the ingredients from a Korean supermarket. (1 TBS = 15ml, 1 Cup = 250ml)
Main Ingredients- Pork (Center Cut Boneless Pork Chop) 360g
- Mirin (Cooking Wine) 4 Tbsp
- Minced Garlic (about a small handful) 1 handful
- Green Chili Pepper (e.g., Cheongyang, Jalapeño, or your favorite) 1
- Potatoes (about palm-sized) 4
- Potato Starch 1 Tbsp
- Black Pepper to taste
- Water 1-1.5 Cups
Seasoning- Doenjang (Fermented Soybean Paste) 1 Tbsp
- Gochugaru (Korean Chili Flakes) 2 Tbsp
- Sugar 1 Tbsp
- Maesil Extract (Plum Syrup) 2 Tbsp
- Soy Sauce (Guk-ganjang) 1 Tbsp
- Oyster Sauce 1 Tbsp
- Doenjang (Fermented Soybean Paste) 1 Tbsp
- Gochugaru (Korean Chili Flakes) 2 Tbsp
- Sugar 1 Tbsp
- Maesil Extract (Plum Syrup) 2 Tbsp
- Soy Sauce (Guk-ganjang) 1 Tbsp
- Oyster Sauce 1 Tbsp
Cooking Instructions
Step 1
Marinate the Pork: Start by preparing 360g of pork. In a bowl, combine the pork with 4 Tbsp of Mirin (cooking wine), a small handful of finely minced garlic (approximately 30g), 1 finely chopped green chili pepper (such as Cheongyang or Jalapeño, adjusted to your spice preference), and a pinch of black pepper. Gently mix everything together. Let it marinate for about 5-10 minutes to allow the flavors to meld.
Step 2
Prepare the Potatoes: Wash and peel 4 palm-sized potatoes. Cut them into bite-sized pieces. Aim for pieces about 0.5 cm thick; cutting them too thinly might cause them to break apart during stir-frying.
Step 3
Make the Seasoning Sauce: In a separate bowl, combine 1 Tbsp Doenjang, 2 Tbsp Gochugaru, 1 Tbsp Sugar, 2 Tbsp Maesil Extract, 1 Tbsp Soy Sauce, and 1 Tbsp Oyster Sauce. Stir well until all the ingredients are thoroughly mixed to create a delicious seasoning paste.
Step 4
Combine Pork and Sauce: Add the prepared seasoning sauce to the marinated pork. Mix everything thoroughly to ensure the pork is evenly coated. Let it marinate for an additional 5-10 minutes. This step deepens the flavor and ensures the sauce adheres beautifully.
Step 5
Stir-fry the Potatoes: Heat a generous amount of cooking oil (olive oil, grapeseed oil, or any preferred cooking oil) in a pan over medium-high or medium heat. Add the cut potatoes and stir-fry until they become about 90% translucent. The exact cooking time will depend on your pan and heat setting. Stir frequently to prevent burning. The potatoes are ready when they start to look translucent.
Step 6
Add Pork and Stir-fry Together: Once the potatoes are about 90% cooked and appear translucent, add the marinated pork to the pan. Stir-fry the pork and potatoes together. Use a spatula to break up any clumps of pork and ensure everything cooks evenly. Stir-frying over high heat for a short time will help keep the pork tender and juicy.
Step 7
Add Water and Thicken: When the pork and potatoes are nearly cooked, pour in 1 Cup (250ml) or up to 1.5 Cups (375ml) of water, depending on your preference. Bring the mixture to a simmer and let it cook for a few minutes for the flavors to meld. In a small bowl, mix 1 Tbsp potato starch with a little water to create a slurry. Gradually add this slurry to the pan while stirring, until the sauce thickens to your desired consistency. Your delicious seasoned pork and potato stir-fry is now ready!
