Ingredients
  • 1 bundle fresh perilla leaves (approx. 20-30 leaves)
  • 1/2 stalk green onion
  • 2 Korean chili peppers (cheongyang peppers)
  • A little carrot (optional)

Seasoning
  • 1 Tbsp soy sauce (jin ganjang)
  • 1 Tbsp anchovy sauce (myeolchi aekjeot)
  • 1 Tbsp plum extract (maesil cheong)
  • Sesame seeds, generous amount
  • A pinch of black pepper
  • 1 Tbsp perilla oil (or sesame oil)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

Gently wash the fresh perilla leaves under running water. After washing, spread them on a colander to drain completely. Excess water can dilute the seasoning.

Step 2

Finely chop the green onion. Julienne the carrot into thin strips. Deseed and finely chop the Korean chili peppers for a touch of spiciness.

Step 3

Julienne the vegetables as finely as possible so they blend well with the perilla leaves. Now, let’s prepare the flavorful seasoning.

Step 4

In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp anchovy sauce, 1 Tbsp plum extract, and 1 Tbsp perilla oil (you can use 2 Tbsp for a richer flavor).

Step 5

Add a pinch of black pepper for aroma, and a generous amount of sesame seeds for a nutty flavor.

Step 6

Add 1 Tbsp minced garlic and mix all the seasoning ingredients thoroughly until well combined. (Optional: For extra spice, you can add 1/2 Tbsp ginger extract or 2 Tbsp red pepper flakes).

Step 7

Once the seasoning is ready, evenly coat the well-drained perilla leaves with the prepared sauce. Your delicious seasoned perilla leaves are now ready!

Step 8

You can individually season each perilla leaf for the best flavor, or for a quicker method, stack 3-4 leaves together and coat them with the seasoning. Enjoy immediately or store in the refrigerator for a delightful side dish with your meals!
