Main Ingredients- Fresh Sea Purslane 200g
Seasoning Ingredients- 1/8 small onion (very finely minced)
- 1 Tbsp Doenjang (Korean fermented soybean paste)
- 1 tsp minced garlic
- 1 tsp sesame oil
- 1 tsp sesame seeds (or ground sesame seeds)

Cooking Instructions
Step 1
First, finely mince the onion. Soak the minced onion in cold water for about 2 minutes to remove its pungent and sharp taste. Afterward, place it on a clean kitchen towel to thoroughly drain any excess water. Set aside.

Bring a generous amount of water to a rolling boil in a pot. Once boiling, add 1/2 Tbsp of salt. Add the cleaned sea purslane and blanch it over high heat for just 30 seconds. Be careful not to overcook it, as it can become mushy. Timing is key here.

Immediately after blanching, transfer the sea purslane to a bowl of cold water to cool it down. Rinse it several times in cold water to stop the cooking process. Once cooled, gently squeeze out as much water as possible using your hands. This step ensures the salad won’t be watery and will absorb the dressing well.

Now, let’s prepare the seasoning. In a mixing bowl, combine 1 Tbsp of doenjang, the drained minced onion, and 1 tsp of minced garlic. Mix thoroughly with a spoon or spatula until the doenjang is smooth and well incorporated. Ensure there are no lumps.
