  • 100g scallions (+ a little bit of leek, optional)
  • 0.5 Tbsp salt (for blanching)

Seasoning Ingredients

  • 0.5 Tbsp tuna extract (or soy sauce)
  • 1 pinch salt (to adjust seasoning)
  • A little minced garlic
  • 0.5 Tbsp sesame oil (for nutty aroma)
  • A little sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare 100g of fresh scallions. If you wish to add more fragrance, have a little leek ready as well.

Clean the scallions thoroughly. Remove any wilted or spoiled leaves. Rub the root ends gently with a little saltwater to remove dirt. For the leafy parts, shake them under running water to wash away any remaining soil.

Boil about 500ml of water in a pot with 0.5 Tbsp of salt. Once the water comes to a boil, turn off the heat. Add the prepared scallions and blanch for just 30 seconds. Make sure all parts of the scallions are submerged in the water. Be careful not to over-blanch, as this can make them mushy.

Remove the blanched scallions and immediately rinse them under cold water to cool them down. To drain the water, don’t twist the scallions. Instead, gently press them as if you’re making a fist to squeeze out the moisture. It’s important to maintain their crisp texture.

Once the excess water is removed, cut the scallions into bite-sized pieces (about 5-7cm long). Young scallions can be left whole, while thicker ones can be cut into 2-3 pieces.

Place the squeezed and clumped scallions into a mixing bowl. Use chopsticks or your fingers to gently separate them. This step ensures the seasoning will distribute evenly.

Now it’s time to add the delicious seasoning. Add 0.5 Tbsp of tuna extract, 1 pinch of salt, a little minced garlic, and 0.5 Tbsp of sesame oil. Gently mix everything together.

While it’s delicious right away, letting it sit for 5-10 minutes will allow the flavors to meld deeper into the scallions, resulting in an even richer taste.
