Main Ingredients- 1 bowl of leftover rice (warm rice also works)
- 1 cup of well-fermented kimchi (chopped)
- 8 small Vienna sausages
- 1/2 cup of green onions (chopped)
- 3 Tbsp cooking oil
- 1/3 Tbsp sugar (to mellow the kimchi’s tang)
- 1 egg (for fried egg)
- Pinch of parsley flakes (for garnish)
- 1 Tbsp sesame oil
- 1/2 Tbsp soy sauce (for a hint of smoky flavor)
Cooking Instructions
Step 1
Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté until fragrant and translucent. Then, add the finely chopped kimchi and stir-fry until the sharp tang of the kimchi mellows and it becomes softer. You’ll know it’s ready when a delicious aroma fills the air.
Step 2
Take half of the Vienna sausages (4 sausages), slice them thinly, and add them to the pan with the kimchi. Stir-fry until the sausages are lightly browned. Once the sausages are cooked, add 1 bowl of leftover rice. Use a spatula to break up the rice grains and mix everything together thoroughly with the kimchi, green onions, and sausages.
Step 3
Push the fried rice ingredients to one side of the pan. In the empty space, add 1/3 tablespoon of sugar and let it cook until it slightly caramelizes, almost sticking to the pan. Next, drizzle 1/2 tablespoon of soy sauce around the edges of the pan. Scrape the bottom with your spatula to incorporate the ‘wok hei’ or smoky aroma. This adds a wonderful depth of flavor. Once the soy sauce is absorbed, mix it well with the rest of the rice and continue to stir-fry.
