This recipe brings back warm memories of my mother warming up ginkgo nuts in a milk carton in the microwave. Ginkgo nuts are not only a delightful snack on their own but also pair wonderfully with a cold beer! However, it’s important to enjoy them in moderation, as consuming too many can lead to digestive discomfort due to a compound called ginkgotoxin. This recipe utilizes frozen ginkgo nuts for ease and speed, guiding you to create delicious pan-fried ginkgo nuts effortlessly.

Ingredients

  • Ginkgo nuts, 2 handfuls (approx. 100-150g)
  • Cooking oil, plenty (approx. 3-4 Tbsp)
  • Salt, 1 tsp

Cooking Instructions

For this recipe, we’re using commercially available frozen ginkgo nuts. Using frozen ones makes peeling the shells significantly easier. If you’re using fresh ginkgo nuts, lightly blanch them in boiling water before attempting to peel.

Generously coat the bottom of a frying pan with cooking oil. It’s crucial to use enough oil to ensure the ginkgo nuts cook evenly without burning.

Once the oil is gently heated over medium-low heat, add all the prepared ginkgo nuts to the pan. Be mindful of the heat; too high a temperature can cause the nuts to burn quickly.

After adding the ginkgo nuts, stir them continuously with a wooden spatula or chopsticks as they fry. You’ll notice them starting to lightly char and release a delightful nutty aroma.

As the ginkgo nuts begin to fry and their shells slightly crack open, it’s time to peel them. A handy tip is to place the nuts between two sheets of paper towel and gently press down; the shells should come off easily. If you don’t have paper towels, you can carefully use the tip of a wooden chopstick to push the shell away from the nut. Be cautious as they might be hot!

Once all the shells are removed, add 1 teaspoon of salt to the pan. You can adjust the amount of salt to your personal preference.

Reduce the heat to low and stir the ginkgo nuts well to ensure they are evenly coated with the salt. Continue to pan-fry for another 1-2 minutes over low heat. Your savory and delicious pan-fried ginkgo nuts are now ready! They taste best served warm.
