Deliciously Tender Roasted Duck Breast, Free of Any Unpleasant Odor!
As a big fan of duck, I often enjoy it, but sometimes its distinct smell can be a bit off-putting. This time, I managed to make a wonderfully flavorful roasted duck dish that was completely free of any gamey odor, and it was absolutely delicious!
Ingredients- 600g Fresh Duck Breast (for roasting)
- 5-6 Perilla Leaves (깻잎)
- 1/2 Onion
- Pinch of Salt
Cooking Instructions
Step 1
Begin by preparing 600g of fresh duck breast for roasting. Place the duck slices onto a preheated griddle or a hot pan. To ensure no gamey smell, it’s best to sear the duck slices over high heat initially to lock in the juices and flavors.
Step 2
As the duck begins to cook, you’ll notice a wonderfully savory aroma filling the air. The natural oils and juices from the duck will render, enhancing its rich flavor. This rendered fat is key to the dish’s deliciousness, so make sure to utilize it.
Step 3
When the duck is about 80% cooked, add the thinly sliced 1/2 onion to the pan and stir-fry it with the duck. The onions will absorb the duck’s flavors and add a touch of sweetness. Sprinkle a pinch of salt intermittently while cooking to season the duck perfectly. Salt also helps to retain the duck’s moisture.
Step 4
Finally, add the 5-6 washed perilla leaves (깻잎) and toss them gently for a quick finish. The aromatic fragrance of the perilla leaves will cut through any richness of the duck, adding a refreshing element. (Traditionally, chives are used, but perilla leaves make an excellent, flavorful substitute when chives are unavailable or too expensive.)
