Main Ingredients- 3 strips pork belly (about 300g)
- 1 medium onion
- Herbal salt, to taste (for seasoning)
Soy Sauce Mixture- 1 Tbsp butter
- 3 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1/3 cup cooking sake (approx. 60ml)
- 1/3 cup mirin (approx. 60ml)
- 1 Tbsp oligosaccharide (or corn syrup)
- 0.2 tsp ginger powder (or a little ginger juice)
- Pinch of coffee grounds (optional, enhances flavor)
- Pinch of black pepper
- 0.5 Tbsp toasted sesame seeds
- 1 Tbsp butter
- 3 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1/3 cup cooking sake (approx. 60ml)

- 1 Tbsp oligosaccharide (or corn syrup)
- 0.2 tsp ginger powder (or a little ginger juice)

Cooking Instructions
Step 1
First, season the 3 strips of pork belly generously with herbal salt. This helps to remove any gamey smell and adds a delightful aroma. Let it marinate for about 10 minutes.

Next, cook the seasoned pork belly until it’s golden brown and slightly crispy on both sides. You can use an air fryer (180°C for about 15-20 minutes) or a preheated pan over medium heat, allowing the pork belly’s own fat to render and cook it.

Once cooked, cut the pork belly into bite-sized pieces, about 2-3 cm wide. This makes it easier to eat and ensures the sauce coats every piece evenly.

In a separate pan, melt 1 tablespoon of butter over medium-low heat. The butter will add a wonderful richness to the onions and pork belly.

Thinly slice 1 onion. Add the sliced onion to the pan with the melted butter and sauté until the onion becomes translucent and releases a slightly sweet aroma.

Once the onions are softened, it’s time to add the sauce ingredients. Pour in 1/3 cup cooking sake, 1/3 cup mirin, 3 Tbsp soy sauce, 1 Tbsp minced garlic, and 0.2 tsp ginger powder. If you have coffee grounds, add a pinch; they enhance the pork belly’s flavor and give it a lovely color. Stir everything together and cook for about 1 minute to meld the flavors.
Step 7
Now, add the cut pork belly to the pan with the sautéed onions and the soy sauce mixture. Toss everything together to ensure the pork belly is well coated with the sauce.

Continue to stir-fry over medium-low heat, allowing the sauce to thicken and coat the pork belly. The sauce will reduce and become glossy. Be sure to stir occasionally to prevent sticking.

Finally, stir in 1 tablespoon of oligosaccharide for extra shine and sweetness. Sprinkle with 0.5 tablespoon of toasted sesame seeds and a pinch of black pepper to balance the flavors.
