Generously oil a large pan over medium heat. Add the chopped green onion, minced garlic, and minced ginger. Sauté until fragrant, about 1-2 minutes. The ginger is crucial for eliminating any porky odor and enhancing the overall flavor profile.

Add the pork bulgogi cuts to the pan. Stir-fry the pork until it starts to change color. Pour in the soju and continue to cook. The soju not only helps to tenderize the pork and remove any unwanted odor but also adds a subtle depth of flavor.
