Cooking Instructions
Step 1
First, place 2.5 cups of rice in your rice cooker. Gently rinse the rice 3-4 times, being careful not to break the grains. Rinsing until the water runs clear will result in a more delicious cooked rice.
Step 2
After rinsing, drain the rice thoroughly in a colander. It’s crucial to remove excess water, as any remaining moisture can make the rice mushy.
Step 3
Wash 300g of fresh bean sprouts under running water until clean. If there are any roots or blemishes, it’s a good idea to remove them for a better texture and appearance.
Step 4
Add the drained rice to the rice cooker. Pour in 2.5 cups of water. While the basic rice-to-water ratio is 1:1, it’s good to add a little extra water since bean sprouts will also be added and release moisture.
Step 5
Now, pour the 2.5 cups of cooking water back into a bowl. Add 1 cup of ground pork to this water and use a chopstick or spoon to break it up into fine pieces, ensuring there are no clumps. This step is a secret technique to prevent the pork from clumping together while cooking, ensuring it’s evenly distributed.
Step 6
Spread the clean bean sprouts evenly over the rice in the rice cooker. Then, pour the seasoned water with the loosened ground pork over the bean sprouts. Finally, drizzle 1 tablespoon of savory perilla oil over the bean sprouts. Perilla oil helps eliminate the ‘fishy’ smell of bean sprouts and the ‘gamey’ smell of pork, adding a wonderful aroma.
Step 7
Now, simply press the ‘Cook’ button on your rice cooker. The delicious pork and bean sprout rice will be prepared. You can use the standard white rice cooking mode.
Step 8
While the rice is cooking, let’s make the flavorful seasoning sauce. First, finely chop 1 green onion.
Step 9
Finely chop 3 Cheongyang chili peppers, removing the seeds for a less intense heat if desired. You can add more if you enjoy spicier food.
Step 10
In a small bowl, combine the chopped green onion and chopped chili peppers. Add 1 tablespoon of minced garlic.
Step 11
Add 1/3 tablespoon of sugar to balance the flavors and 1 tablespoon of Korean chili powder for a nice kick. Then, pour in enough soy sauce to generously coat the ingredients. You can adjust the amount of soy sauce according to your preference.
Step 12
Finally, add 2 tablespoons of fragrant sesame oil for an extra layer of richness.
Step 13
Mix all the ingredients thoroughly with a spoon until well combined. Your delicious seasoning sauce is now ready!
Step 14
Serve the hot, freshly cooked pork and bean sprout rice with a generous dollop of the seasoning sauce. Mix it all together and enjoy this flavorful and satisfying meal!
