Savory Pollack Roe Rolled Omelet

Everyone loves a good egg roll, a true staple found in most Korean refrigerators! We’ve elevated this classic by adding pollack roe (myeongran), infusing it with a uniquely savory and rich flavor. This recipe creates a delightful dish perfect as a side for any meal or a charming addition to your lunchbox.
Pollack Roe Egg Roll Ingredients
- 4 fresh eggs
- 1/2 green onion (scallion), white part mainly
- 2 pollack roe sacs (myeongran)
- A small amount of carrot
- 1/2 tsp vinegar (to remove fishiness)
- Generous amount of cooking oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Crack 4 fresh eggs into a bowl. Add 1/2 teaspoon of vinegar to help eliminate any potential fishiness. Finely mince the green onion and carrot. Minced vegetables will make the omelet smoother and more visually appealing. Gently whisk all the ingredients together without creating too much foam. Over-whisking can cause the omelet to break apart easily.
Step 2
Now it’s time to cook the omelet. Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Pour in about one-third of the egg mixture to form a thin layer. Once the egg starts to set slightly, carefully place the 2 prepared pollack roe sacs onto the egg layer. For a smoother texture, you can remove the thin outer membrane of the roe before placing it.
Step 3
When the first layer of egg is about halfway cooked, gently roll it up from the bottom towards the top. Push the rolled portion to one side of the pan. Add a little more cooking oil to the empty part of the pan, and pour in another portion of the egg mixture. Repeat this process of pouring egg mixture and rolling, layering the pollack roe as desired in between layers, to create a thick and appealing rolled omelet. Ensure each layer is rolled tightly for a neat shape.
Step 4
Once the omelet is fully cooked, let it cool slightly before slicing. This will prevent it from crumbling. Slice the omelet into bite-sized pieces and arrange them neatly on a serving plate.
