Main Ingredients- 200g prepared perilla shoots
- 1/2 onion
Seasoning Base- 2 Tbsp Korean soup soy sauce (Guk-ganjang)
- 1 Tbsp plum extract
- 1/2 Tbsp minced garlic
- 2 Tbsp perilla oil
Stir-frying Seasoning- 5-6 Tbsp water
- 1 Tbsp perilla seed powder
- 1/2 Tbsp toasted sesame seeds
For Blanching- 1 Tbsp coarse sea salt

Cooking Instructions
Step 1
First, let’s prepare the perilla shoots. Start by trimming and cleaning them. Fresh, vibrant perilla shoots are key to a delicious dish.

Remove any tough stems and wilted or damaged leaves. It’s important to clean them up visually for the best texture.
Step 3
Tough stems, in particular, can remain fibrous even after blanching, so it’s best to remove them entirely for a more pleasant eating experience. This step ensures a tender result.

Select only the tender leaves and prepare them. These delicate leaves will yield the most delicious texture when stir-fried.

Rinse the prepared perilla shoots several times under running water. Make sure to wash them thoroughly to remove any dirt or debris.

Drain the washed perilla shoots well in a colander. Excess water can make the final dish soggy.

Fill a pot with enough water to cover the perilla shoots and add 1 tablespoon of coarse sea salt. Blanching with salt helps to retain the vibrant green color and adds a pleasant crispness.
