Main Ingredients- Spring Cabbage 250g (Choose fresh and crisp ones.)
Seasoning Ingredients- Minced Scallions 1 Tbsp (Green onions or the white parts of leeks work well.)
- Soybean Paste (Doenjang) 1 tsp (Homemade or store-bought paste is fine.)
- Minced Garlic 1/2 tsp (Reduce slightly if you prefer a milder garlic flavor.)
- Perilla Seed Powder 1 Tbsp (This is key for that nutty richness! Be generous.)
- Sesame Oil (Perilla) 1 tsp (Using perilla oil instead of regular sesame oil adds extra nuttiness.)

Cooking Instructions
Step 1
First, wash the spring cabbage thoroughly. Make sure to clean between the leaves to remove any soil, then shake off excess water and set aside.

Bring a pot of water to a rolling boil. Add a pinch of salt to the boiling water. Quickly blanch the prepared spring cabbage for just 5 seconds. Be careful not to overcook it, as it can become mushy.

Immediately transfer the blanched spring cabbage into cold water to cool it down. Rinse it under running cold water, then gather the cabbage with both hands and squeeze out as much water as possible. Properly draining the water is crucial to prevent the salad from tasting bland.
