- 3 Tbsp Perilla Oil
Seasonings & Aromatics- 1 Tbsp Minced Garlic
- 2 Tbsp Perilla Seed Powder
- 1 Tbsp Fish Sauce (Anchovy or Sand Lance)

- 1 Tbsp Chopped Scallions (for garnish)
- 1 Tbsp Minced Garlic
- 2 Tbsp Perilla Seed Powder
- 1 Tbsp Fish Sauce (Anchovy or Sand Lance)
- Salt to taste (adjust as needed)
- 1 Tbsp Chopped Scallions (for garnish)
Cooking Instructions
Step 1
First, peel the radish thoroughly. Then, cut the radish in half crosswise; this makes the bottom flat, so it’s much easier to slice. Slice it to about 0.5 cm thickness.
Step 2
Next, julienne the sliced radish into thin strips, about 0.5 cm thick. Julienne strips allow the seasoning to penetrate well and contribute to a pleasant texture.
Step 3
Now, heat a frying pan over medium heat and add 3 tablespoons of perilla oil. Add 1 tablespoon of minced garlic and sauté for about 30 seconds until fragrant, releasing its aromatic flavor.
Step 4
Add the julienned radish to the pan. Use a spatula to gently stir and coat all the radish strips with the perilla oil.
Step 5
Once the radish is coated with oil, reduce the heat to low. Cover the pan with a lid and let it cook for about 1 minute. This steaming process will help release some moisture from the radish.
Step 6
After 1 minute, lift the lid. You should see some moisture that has come out from the radish. Stir gently again with the spatula to ensure the radish cooks evenly.
Step 7
It’s time to add the seasonings for that umami boost. Add 1 tablespoon of fish sauce (anchovy or sand lance type) and mix it well with the radish. Remember that the saltiness can vary depending on the type of fish sauce, so adjust the amount accordingly.
Step 8
Finally, season with salt to adjust the taste to your preference. It’s important to add salt gradually and taste the radish as you go to achieve the perfect flavor balance.
Step 9
After tasting, check if the radish is cooked through and tender. I took out a piece of radish to taste, and it was cooked perfectly soft. Now, for the star ingredient for that nutty richness: add 2 tablespoons of perilla seed powder generously.
Step 10
After adding the perilla seed powder, turn off the heat. Gently mix everything together using the residual heat; this completes your delicious perilla seed radish stir-fry. Avoid overcooking after adding the perilla powder, as it can diminish its wonderful aroma.
Step 11
Transfer the finished perilla seed radish stir-fry to a serving dish. Sprinkle the chopped scallions on top as a garnish for a visually appealing finish. This stir-fry, packed with nutty perilla seeds and showcasing the natural sweetness of the radish, is an exceptional winter side dish that’s a true delight with rice!
