How to Make Delicious Perilla Seed Radish Soup: A Simple and Nutty Korean Soup for Breakfast
When the weather turns chilly, a warm bowl of soup is just what you need. I decided to make a comforting Radish Soup with Perilla Seeds using a radish from my fridge. The natural sweetness of the radish combined with the rich, nutty flavor of perilla seeds makes this soup perfect for a hearty meal, especially when you want to mix rice right in. It’s a wonderfully satisfying and soothing dish.
Ingredients- 500g Korean radish (approx. 1/4 large radish)
- 4 Tbsp perilla seed powder
- 2.5 Tbsp soup soy sauce (Gukganjang)
- 1 Tbsp crab roe or fish sauce (Daegeeo-ganjang, or anchovy sauce)
- 2 tsp Korean rock salt (Cheonilyeom)
- 800ml water
Cooking Instructions
Step 1
First, thoroughly peel the radish. Slice it thinly into half-moon shapes, about 0.5cm thick, then cut these slices into long, matchstick-like strips, also about 0.5cm thick. This slicing method helps the radish soften nicely in the soup while retaining a pleasant texture.
Step 2
Now, prepare a pot. Add all the julienned radish to the pot. Pour in 800ml of water. You can adjust the water amount according to your preference for soup consistency.
Step 3
Place the pot over high heat. Once the water comes to a boil, add 2.5 Tbsp of soup soy sauce and 1 Tbsp of crab roe or fish sauce for a deep, savory flavor. You can substitute with anchovy sauce or sand lance sauce if you don’t have Daegeeo-ganjang.
Step 4
Reduce the heat to medium. Cover the pot and let it simmer for about 10 minutes, or until the radish becomes translucent and tender. The radish will release its natural sweetness into the broth.
Step 5
Once the radish is well-cooked, it’s time to add the secret ingredient for its rich nuttiness: 4 Tbsp of perilla seed powder. Make sure to stir well to dissolve the powder evenly, preventing clumps.
Step 6
Continue to simmer the soup for another 1-2 minutes after adding the perilla seeds. This allows the nutty aroma and flavor to fully infuse into the broth, creating a wonderfully deep and satisfying taste. Taste and adjust the seasoning with 2 tsp of Korean rock salt if needed. Your delicious and savory Perilla Seed Radish Soup is ready! It’s absolutely delightful when mixed with rice.
