Enjoy bean sprouts, one of the most affordable and filling ingredients! This recipe shows you how to make both refreshing bean sprout soup and flavorful seasoned bean sprouts from a single batch of sprouts. It’s a perfect way to add a satisfying element to your meal.
Main Ingredients- 800g thick bean sprouts
- 1/2 white stalk of scallion
- 1 Korean chili pepper (optional)
Seasoning- 2 tsp salt (for soup) or 1/2 Tbsp salt (for seasoning)
- 3 Tbsp perilla seed powder
- 1/2 Tbsp minced garlic
- 1 Tbsp perilla oil
- 1/2 Tbsp red pepper flakes (for soup)

Cooking Instructions
Step 1
Prepare the thick bean sprouts and rinse them thoroughly in cold water to remove any loose skins. Place half the amount of water as the bean sprouts in a pot and bring it to a boil. When boiling bean sprouts, either leave the lid off from the start, or if using a lid, do not open it midway. Once steam begins to rise, let it boil for 5 minutes, then open the lid to check.
Step 2
Once the bean sprouts are cooked, drain 2/3 of the amount into a colander and let them cool slightly. This step ensures the seasoned bean sprouts remain crisp and don’t become mushy.
Step 3
While the drained bean sprouts are cooling, finely chop half of the white stalk of the scallion and add it to the remaining bean sprouts and broth in the pot. Season the bean sprout soup with red pepper flakes and salt. If you prefer a spicier flavor, finely chop one Korean chili pepper and add it in. This will give the soup a kick.
Step 4
Simmer the seasoned bean sprout soup for another 1-2 minutes until complete. Turn off the heat and let it rest briefly for the flavors to meld.
Step 5
To the slightly cooled cooked bean sprouts, add the remaining chopped scallion, minced garlic, and the salt designated for the seasoning. Prepare all ingredients to be mixed evenly with the bean sprouts.
Step 6
Add the prepared seasoning ingredients to the bean sprouts and gently mix them. Be careful not to break the bean sprouts to maintain their crisp texture.
Step 7
After lightly mixing the bean sprouts with the initial seasonings, add the perilla seed powder and perilla oil. Gently toss everything together again. Adding the perilla seed powder and oil last preserves their savory flavor and aroma.
