Savory Perilla Seed and Potato Tteokguk
[10-Minute Recipe] Perilla Potato Tteokguk: Unfailingly Delicious and Nutty Flavor
Do you enjoy the rich, nutty flavor of perilla seed soup (tteokguk)? While making traditional dough for sujebi can be tedious, I sometimes opt for using tteokguk rice cakes for a quick and incredibly delicious variation. Let me introduce you to a simple yet guaranteed-to-please special dish that’s perfect for any time!
Ingredients- Anchovy broth 350ml + 150ml
- Ground perilla seeds 5 Tbsp
- Sweet rice flour 1-2 Tbsp
- Soup soy sauce (Guk-ganjang) 1 Tbsp
- Salt 1 tsp (or to taste)
- Potato 1 medium
- Tteokguk rice cakes 100-150g
- Minced garlic 1 tsp
- White part of green onion, a little
Cooking Instructions
Step 1
First, prepare the essential broth for your delicious tteokguk. Boil anchovies and dried kelp together for 10 minutes to create a rich stock. (If you don’t have pre-made broth, use about 5 dried anchovies and 1 piece of dried kelp, boiling for 10 minutes.)
Step 2
Pour 350ml of the 500ml total prepared anchovy broth into a pot and bring it to a boil. Once simmering, add 1 Tbsp of soup soy sauce for a deeper savory flavor. Add the potato, cut into bite-sized pieces, and cook for about 1 minute.
Step 3
Now, let’s make the flavorful perilla seed sauce that gives this tteokguk its signature nutty taste. In a bowl, combine the ground perilla seeds, the remaining 150ml of anchovy broth, and 1-2 Tbsp of sweet rice flour. Whisk well until smooth and free of lumps to achieve a creamy consistency.
Step 4
Add the tteokguk rice cakes to the boiling base broth in the pot. Stir occasionally to prevent them from sticking together as they cook.
Step 5
Slowly pour the prepared perilla seed mixture into the pot with the broth and rice cakes. Add the minced garlic and finely chopped white part of the green onion. Stir everything together to ensure the ingredients are well combined.
Step 6
Continue to simmer the tteokguk for about 7-8 minutes, or until the rice cakes and potatoes are tender and the soup has thickened to your desired consistency. Finally, taste and adjust the seasoning with salt if needed. The recipe suggests 1 teaspoon of salt, but feel free to adjust based on your preference.
Step 7
As it simmers, the nutty aroma intensifies, and the perilla potato tteokguk is ready to be enjoyed! This comforting soup, with its chewy rice cakes and tender potatoes, makes for a satisfying meal or a delightful special dish. Enjoy your delicious creation!
