A Nutritious and Delicious Perilla Seed and Mushroom Soup Recipe

Ingredients- 1 handful King Oyster Mushrooms (approx. 50g)
- 1 King Oyster Mushroom (approx. 80g)
- 2 Shiitake Mushrooms (approx. 40g)
- 1 Potato (medium size, approx. 100g)
- 1/4 block Firm Tofu (approx. 80g)
- 0.5 Tbsp Anchovy Sauce
- Salt to taste
- 4 Tbsp Perilla Seed Powder
- 2 Tbsp Sweet Rice Flour
- 600ml Anchovy Broth (approx. 3 cups)
Cooking Instructions
Step 1
First, prepare the mushrooms. Tear the oyster mushrooms into bite-sized pieces. Clean and thinly slice the king oyster mushrooms and shiitake mushrooms. Peel the potato and cut it into thin, uniform slices (about 0.5 cm thick). Cutting them not too large will help them absorb the soup’s flavor better and cook faster.
Step 2
To enhance the nutty flavor of the soup and thicken it, mix the perilla seed powder and sweet rice flour beforehand. In a bowl, combine 4 Tbsp of perilla seed powder and 2 Tbsp of sweet rice flour. Whisk them together until smooth, ensuring there are no lumps. Pre-mixing like this prevents clumps from forming while cooking.
Step 3
In a deep pot, pour in 600ml of anchovy broth and add the sliced potatoes. Bring to a boil over high heat, then reduce to medium heat and simmer for about 10 minutes, or until the potatoes become translucent. The broth will start to thicken slightly as the potatoes cook.
Step 4
Once the potatoes are almost cooked, add all the prepared mushrooms and simmer together. As the mushrooms soften, season the soup with 0.5 Tbsp of anchovy sauce and salt to your preference. Finally, slowly pour the pre-mixed perilla seed and sweet rice flour mixture into the broth while stirring continuously to prevent lumps. Continue to cook for another 2-3 minutes until all ingredients are well combined and the soup has thickened to your liking. Taste and adjust seasoning with more salt if needed. You can also add diced tofu at the end and simmer for a short while longer if desired.
