A deeply savory and nutty Dried Radish Greens and Soybean Paste Soup, enriched with the addition of fragrant perilla seeds. This recipe brings a comforting and hearty flavor to your table.
Key Soup Ingredients- 1 handful of prepared dried radish greens (about 250g)
- 7 cups of anchovy and kelp broth (approx. 1.4L)
- 4 cups of rice water (approx. 800ml)
- 3-4 Tbsp soybean paste (adjust to taste)
- 5 Tbsp fresh perilla seed powder (generous amount)
Cooking Instructions
Step 1
First, take the pre-boiled and prepared dried radish greens and cut them into bite-sized pieces, about 3cm in length. Cutting them larger provides a more satisfying chew.
Step 2
In a deep pot or cauldron, place the cut radish greens. Add 3 tablespoons of soybean paste and gently massage it into the greens with your hands until well combined. This pre-seasoning step ensures the soybean paste flavor evenly infuses into the radish greens, creating a deeper taste.
Step 3
Pour in the 7 cups of anchovy and kelp broth and 4 cups of rice water. Bring the soup to a boil over high heat. Once boiling, reduce the heat to medium-low and let it simmer gently. This simmering process will tenderize the radish greens.
Step 4
While the soup is simmering, prepare the other ingredients. Thinly slice the leek and finely chop or slice the onion. Thinly slice the Korean chili peppers if you wish to add a bit of heat. Measure out 5 tablespoons of fresh perilla seed powder; a generous amount will enhance the nutty flavor.

Continue to simmer the soup over medium-low heat for about 20 minutes. Then, add 1 tablespoon of minced garlic and stir well. Let it simmer for a little longer to allow the garlic aroma to infuse into the broth.

After simmering for another 5 minutes, taste the soup and adjust the seasoning by adding more soybean paste if needed. Finally, add all 5 tablespoons of the fresh perilla seed powder and stir gently. The total simmering time should be around 30 to 40 minutes. Ensure the radish greens are tender and the flavors have melded well.
