This porridge, rich with nutty perilla seeds and fresh chives, is perfect for a light yet satisfying meal. Its smooth texture and delightful aroma are sure to please everyone.
Porridge Ingredients- 2 Tbsp perilla oil
- 400g cooked rice (about 2 bowls)
- 1/2 medium onion
- 1/3 small zucchini
- 100g chives
- 4 Tbsp perilla seed powder
- 500ml anchovy broth
Seasoning- 1 Tbsp soup soy sauce
- 2 Tbsp anchovy sauce
- 1 Tbsp soup soy sauce
- 2 Tbsp anchovy sauce
Cooking Instructions
Step 1
First, heat 2 tablespoons of perilla oil in a pot over medium-low heat. Add the thinly sliced onion and sauté until it becomes translucent and fragrant. This step draws out the onion’s natural sweetness, enhancing the porridge’s overall flavor.
Step 2
Once the onion is softened, add the thinly sliced zucchini and continue to stir-fry them together until the zucchini is tender. Be careful not to overcook the zucchini, as you want it to retain some texture.
Step 3
Now, add 400g of cooked rice (approximately 2 bowls) to the pot. Stir-fry the rice evenly with the sautéed vegetables. Coating the rice grains with oil helps prevent the porridge from clumping and ensures a smooth consistency.
Step 4
Pour in 500ml of warm anchovy broth and stir well to help the rice break down. Make sure the broth is evenly distributed amongst the ingredients.
Step 5
Add 1 tablespoon of soup soy sauce and 2 tablespoons of anchovy sauce to season the porridge. Stir continuously while it simmers. Once it comes to a boil, reduce the heat to medium-low and continue to cook, stirring frequently to prevent sticking to the bottom of the pot.
Step 6
When the porridge starts to thicken to your desired consistency, add the chopped chives. Rinse the chives thoroughly and chop them finely. Add them at this stage, as they only need a short time to cook and will retain their fresh flavor and slight crunch.
Step 7
Finally, stir in 4 tablespoons of perilla seed powder for a rich, nutty aroma. Whisk gently to ensure the powder is well incorporated and there are no lumps.
Step 8
Your delicious and fragrant perilla leaf and chives porridge is now ready! Serve hot and enjoy. For an extra touch, you can garnish with shredded seaweed or sesame seeds. ^^
