Low-Sodium Side Dish: Pan-Seared Oyster Mushrooms with Rich Perilla Flavor
Discover the delightful chewiness and nutty aroma of oyster mushrooms with this simple, low-sodium dish. Perfect for autumn, this pan-seared preparation minimizes nutrient loss and oil usage while enhancing the mushrooms’ naturally firm texture. Oyster mushrooms, often called ‘medicinal’ during the fall season, are packed with nutrients. Their fan-like shape softens beautifully when cooked, and their texture is so satisfyingly meaty that they’re a popular meat substitute. This recipe skips the salt entirely, relying on the rich, earthy flavor of perilla powder for a delicious and healthy side dish. Enjoy the goodness of seasonal mushrooms!
Main Ingredients- 1 pack Oyster Mushrooms (approx. 200-250g)
- 1 Tbsp Cooking Oil
Perilla Dressing- 1 Tbsp Soy Sauce
- 1 Tbsp Perilla Oil
- 1 Tbsp Perilla Seed Powder (generous)
- 0.5 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 Tbsp Perilla Oil
- 1 Tbsp Perilla Seed Powder (generous)
- 0.5 Tbsp Minced Garlic
Cooking Instructions
Step 1
Prepare the oyster mushrooms by trimming off the tough, woody base. Gently tear the mushroom clusters into bite-sized pieces. Aim for pieces that are not too small, so they retain a pleasant chewiness when cooked.
Step 2
Lightly rinse the torn mushrooms under cool running water. Avoid washing them too vigorously or for too long, as this can diminish their delicate flavor and aroma. The goal is simply to remove any surface dirt or debris.
Step 3
Drain the mushrooms thoroughly. Pat them dry with paper towels to remove as much excess moisture as possible. This step is crucial for achieving a nicely seared and slightly crispy texture, preventing them from becoming soggy and reducing oil splattering during cooking.
Step 4
Arrange the dried mushrooms in an oven-safe dish or an air fryer basket. Drizzle the cooking oil evenly over the mushrooms, coating them lightly. This preparation ensures they sear nicely without sticking. Since this is a low-sodium dish, we are omitting salt and relying solely on the oil for searing.
Step 5
Preheat your oven or air fryer to 180°C (350°F). Place the oiled mushrooms inside and cook for about 5 minutes. The mushrooms will soften and start to turn lightly golden. Be careful not to overcook them, as they can become tough and lose their desirable texture. Keep an eye on them to achieve the perfect tenderness.
Step 6
Once the mushrooms are lightly seared and tender, transfer them to a mixing bowl. It’s best to dress them while they are still warm to allow the flavors to meld beautifully.
Step 7
Prepare the flavorful perilla dressing. In a small bowl, combine the soy sauce, perilla oil, perilla seed powder, and minced garlic. Whisk these ingredients together until well combined.
Step 8
Pour the prepared perilla dressing over the warm, seared mushrooms in the mixing bowl. Gently toss the mushrooms to ensure they are evenly coated with the dressing. Avoid over-mixing to keep the mushroom pieces intact. Your delicious, chewy, and nutty low-sodium oyster mushroom dish is now ready to be served!
