Main Ingredients
  • 3 medium potatoes
  • 1 can of ham or Spam (340g)
  • 1/2 onion
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds
  • 3 Tbsp cooking oil

Seasoning Ingredients
  • 1/2 Tbsp minced garlic
  • Salt to taste
  • Pepper to taste

  • 1 red chili pepper
  • 1/4 green bell pepper

Cooking Instructions

Step 1

First, let’s prepare the ingredients for our delicious potato and ham stir-fry. If you’re using medium-sized potatoes, three should be enough for about 4 servings. If you have smaller potatoes, use four. The red chili pepper and green bell pepper add a lovely color, but the dish is still delicious without them. I’m using a red chili pepper today!

Step 2

Peel the potatoes and cut them into thin, julienne strips (about 0.5 cm thick). This ensures they cook evenly and have a pleasant texture. Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch. Rinsing off the starch prevents the potatoes from sticking together and keeps the stir-fry looking neat.

Step 3

Drain the potatoes thoroughly using a sieve after soaking. Gently pat them dry with a paper towel to remove any remaining moisture. This step is crucial for achieving a good stir-fry texture.

Step 4

Peel the onion and slice it into strips about 1 cm thick, similar to the thickness of the potatoes. Cut the ham (or Spam) into similar-sized pieces. If you’re using red chili pepper and green bell pepper, remove the seeds and julienne them finely for a beautiful presentation.

Step 5

Now, let’s start stir-frying! Heat 3 tablespoons of cooking oil in a pan over medium heat. Add the prepared julienned potatoes. Stir the potatoes gently with a spatula, ensuring they don’t burn, until they become translucent and slightly golden brown around the edges. This gradual cooking is key to perfectly cooked potatoes.

Step 6

Once the potatoes are mostly translucent, add the sliced onion and ham (or Spam) to the pan. Also, add the seasoning ingredients: 1/2 tablespoon of minced garlic, a pinch of salt, and a dash of pepper. Continue to stir-fry for another 2-3 minutes, allowing all the ingredients and seasonings to meld together.

Step 7

During the cooking process, taste a piece of potato to check the seasoning. If it’s not salty enough for your preference, add a little more salt gradually until it’s just right. Be mindful of the saltiness from the ham itself, so start with a small amount.

Finally, drizzle in 1 tablespoon of sesame oil to add a rich, nutty aroma. Stir quickly to combine, then immediately turn off the heat. Adding sesame oil at the end preserves its fragrant flavor.
