On a weekend, I’m cooking again. Looking into the fridge, what should I make? What should I eat? I made pan-fried mushrooms and zucchini with two kinds of ingredients: king oyster mushrooms and zucchini. While making soybean paste stew, I stir-fried mushroom and zucchini side dish in perilla oil. This is a simple yet flavorful side dish that’s perfect for any meal.

Main Ingredients

  • 1/2 zucchini
  • 1 king oyster mushroom
  • 1/4 onion
  • A little carrot
  • A little green onion

Cooking Instructions

First, prepare the vegetables. Wash the zucchini thoroughly and slice it into 0.5 cm thick half-moon shapes. Slice the king oyster mushroom similarly into half-moon shapes or bite-sized pieces. Thinly slice the onion, thinly slice or julienne the carrot for color, and finely chop the green onion to add aroma.

Heat about 1 tablespoon of cooking oil in a pan over medium-low heat. Add the sliced onion and chopped green onion and stir-fry until fragrant. Sautéing these aromatics first will add a deeper flavor to your stir-fry.

Once the onion becomes translucent, add the prepared zucchini, king oyster mushrooms, and carrots to the pan. Increase the heat to high and stir-fry quickly. Stir-frying rapidly without letting the vegetables become too soft will help maintain their crisp texture.

Now it’s time to season. Using salted shrimp (saeujeot) would add umami, but if you don’t have it, season with salt. It’s important not to oversalt and to taste as you go. Since vegetables can release water, stir-fry quickly over high heat.

When the vegetables are cooked to your liking, reduce the heat to low. Drizzle in 1-2 tablespoons of fragrant perilla oil. Gently mix to allow the nutty aroma of the perilla oil to infuse into the vegetables. Finally, sprinkle with sesame seeds for an extra nutty flavor. Avoid overcooking to preserve the perilla oil’s aroma.

You can add 1/2 teaspoon of minced garlic if you like, but this recipe focuses on bringing out the natural flavors of the vegetables and the aroma of the perilla oil without it. If you have whole garlic cloves, thinly slicing them and stir-frying them with the onion would also be very aromatic. Your delicious pan-fried mushroom and zucchini dish is now ready!
