Wash and peel the 2 onions. Slice them into rounds about 0.5cm thick. Sprinkle a pinch of salt over the sliced onions and the egg for light seasoning.

Spread a generous amount of frying powder on a wide plate. Place the sliced onions on the powder, and add the drained tuna on top of the onions. Use a sieve to sprinkle more frying powder over the onions and tuna to help them stick together. (Tip: Pre-spreading the flour on the plate makes it easier to coat the onions.)

Whisk the egg in a bowl to make egg wash. Heat a pan with plenty of cooking oil over medium-low heat. Dip the flour-coated onions and tuna into the egg wash, then carefully place them in the preheated pan. Top each fritter with chopped green onions and, if using, the chopped chili peppers.

Sprinkle a generous amount of mozzarella cheese over the green onions and peppers. Once the bottom of the fritters turns golden brown, carefully flip them using a spatula. Gently press down to secure the cheese.
