Main Ingredients- 3 onions
- 3 eggs
- 4 stalks of green onions
- 1/2 Tbsp minced garlic
- 1 tsp salt
- 1 Tbsp salted shrimp (saeujeot)
- A pinch of black pepper
Anchovy Broth Ingredients- 6 cups of water (approx. 1.2 liters)
- 6 dried anchovies for broth
- A few roots of green onion
- 6 cups of water (approx. 1.2 liters)
- 6 dried anchovies for broth
- A few roots of green onion
Cooking Instructions
Step 1
First, let’s prepare the anchovy broth. In a pot, add 6 cups of water (about 1.2 liters). Add 6 dried anchovies, making sure to remove their guts for a cleaner flavor. You can also add the cleaned roots of the green onions you’ll use for garnish later to enhance the broth’s savory notes. Bring to a boil over high heat and simmer for about 10 minutes to extract the rich flavor.
Step 2
Once the broth has simmered sufficiently, carefully remove and discard the anchovies and green onion roots using a sieve.
Step 3
Now, add 1/2 tablespoon of minced garlic to the simmering anchovy broth. This will add a wonderful aroma and depth of flavor.
Step 4
Thinly slice 3 onions. Add the sliced onions to the boiling broth and cook until they become translucent and release their sweetness, about 5-7 minutes over medium heat.
Step 5
While the onions are cooking, crack 3 eggs into a separate bowl. Add 1 teaspoon of salt and whisk thoroughly until well combined and slightly frothy. This helps to break down the egg whites and create a smoother texture when cooked.
Step 6
When the sliced onions turn translucent and are tender, turn off the heat for a moment.
Step 7
With the heat off, slowly drizzle the beaten eggs into the pot in a circular motion, starting from the edge. This helps the egg cook into delicate ribbons rather than a solid mass.
Step 8
As the egg begins to set and form soft curds…
Step 9
Finely chop 3 stalks of green onion for garnish. Sprinkle a pinch of black pepper into the pot. Gently break up the cooked egg with a spoon, stirring it together with the chopped green onions. Be careful not to overmix.
Step 10
Finally, add 1 tablespoon of salted shrimp (saeujeot) to season the soup. Adjust the amount to your personal taste. (You can add a little more salt if needed).
Step 11
Give everything a gentle stir to combine the ingredients well.
Step 12
To serve beautifully, ladle the solid ingredients (onions and egg) into a bowl first. Then, pour the hot broth over them for an aesthetically pleasing presentation.
Step 13
Just before serving, finely chop the remaining 1 stalk of green onion and sprinkle it over the soup as a garnish. This adds a fresh aroma and a pop of color, completing your delicious Onion Egg Soup.
Step 14
Start your busy morning with a comforting bowl of Onion Egg Soup. It’s also a wonderful accompaniment to fried rice or spicy dishes, offering a refreshing contrast and balancing the flavors. With ingredients and preparation this simple, if you’re ever wondering ‘What should I eat today?’, I wholeheartedly recommend this Onion Egg Soup from Sweet Sweet Mom!
