Don’t let those delicious Matsutake mushrooms go to waste! This recipe transforms them into a flavorful dish by marinating them with a rich bulgogi sauce. Combined with tender, marinated beef bulgogi, the chewy texture of the mushrooms and the savory depth of the beef create a truly delightful culinary experience. Main Ingredients- 1 pack Matsutake mushrooms (or King Oyster mushrooms)
- 1 Kg Beef, thinly sliced for bulgogi
- 1/3 cup Soju (for tenderizing and removing odor)
- 1 Onion
- 1 handful Tteokguk rice cakes (optional)
Bulgogi Marinade- 2 Tbsp Oyster sauce
- 7 Tbsp Soy sauce
- 2 Tbsp Honey (or corn syrup)
- 3 Tbsp Sugar
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced garlic
- Green onion (chopped)
- Sesame seeds (for garnish)
- Black pepper (a pinch)
- 2 Tbsp Oyster sauce
- 7 Tbsp Soy sauce
- 2 Tbsp Honey (or corn syrup)
- 3 Tbsp Sugar
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Minced garlic
- Green onion (chopped)
- Sesame seeds (for garnish)
- Black pepper (a pinch)
Cooking Instructions
Step 1
First, thoroughly pat the beef slices dry with paper towels or a clean cloth to remove excess blood. Draining the moisture well ensures the marinade penetrates deeply, resulting in a more flavorful dish.
Step 2
Slice the Matsutake mushrooms (or King Oyster mushrooms) into relatively thick pieces, about 1cm (0.4 inches) thick. Cutting them too thinly might diminish their chewy texture after cooking.
Step 3
Peel the onion and slice it thinly into strips about 0.5cm (0.2 inches) thick. The natural sweetness of the onion will enhance the overall flavor of the bulgogi and mushrooms.
Step 4
In a bowl, combine the sliced mushrooms with all of the prepared bulgogi marinade. Gently mix and massage the marinade into the mushrooms, ensuring they are evenly coated. Let them marinate for about 5 minutes.
Step 5
Add the beef bulgogi slices to a separate bowl. Pour the remaining marinade over the beef and mix well. You can add the sliced onion here as well. Marinate for at least 30 minutes, or preferably longer, in the refrigerator. This allows the beef to become more tender and absorb the flavors deeply.
Step 6
Heat a wok or grill pan over medium-high heat. Add the marinated mushrooms and cook until they are nicely browned and slightly tender. They will release some moisture as they cook.
Step 7
While the mushrooms are cooking, heat another pan over high heat. Add the marinated beef bulgogi and stir-fry quickly until it’s cooked through. The beef will release its delicious juices. If you are adding the Tteokguk rice cakes, add them now and cook until tender.
Step 8
Transfer the cooked mushrooms and stir-fried bulgogi to a serving platter or a grill pan. While you can cook them together, cooking them separately allows you to appreciate the distinct textures and flavors of each ingredient.
Step 9
Garnish with the chopped green onions and sesame seeds. Serve and enjoy with your favorite lettuce wraps!
