  • 2 Tbsp Sugar
  • 1 Tbsp Korean Plum Extract (Maesilcheong)
  • 2 Tbsp Mirin (or cooking wine)
  • 1 handful Soaked Glass Noodles (approx. 50g)

Bulgogi Marinade

  • 6 Tbsp Soy Sauce
  • 2 Tbsp Fish Sauce (optional, for depth)
  • 2 Tbsp Minced Garlic
  • 1 Tbsp Toasted Sesame Seeds (ground)
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, pat the beef bulgogi slices dry with a paper towel to remove excess blood. Place the beef in a bowl and add 2 Tbsp sugar, 1 Tbsp Korean plum extract, and 2 Tbsp mirin. Gently massage the marinade into the meat with your hands. Let it marinate for at least 1 hour to tenderize the beef and allow the flavors to penetrate. (Tip: If pears are in season, you can add grated pear for extra tenderness, but it can be expensive in the summer.)

While the beef is marinating, prepare the vegetables. Thinly slice the onion (1) and carrot (1/3) into julienne strips. Trim the woody ends off the enoki mushrooms and gently pull them apart. Slice the green onions (2) diagonally.
