- Luncheon meat or Spam, 238g (1 can)

Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. This ‘mise en place’ approach helps ensure a smooth and enjoyable cooking process.
Step 2
To remove excess oil and saltiness from the luncheon meat or Spam, blanch it in boiling water for a minute. This step will result in a cleaner, milder flavor in your scramble.
Step 3
Crack 4 fresh eggs into a clean bowl. Be careful not to let any shell fragments fall into the bowl.

Add a pinch of sugar and a pinch of black pepper to the eggs. Adjust the amount according to your personal preference for sweetness and spice.

Gently whisk the eggs with sugar and pepper until just combined. You can use a whisk or a fork. Avoid over-whisking; aim for a consistent yellow mixture without streaks of white or yolk.
Step 6
Pour in the milk (61g or about 4 Tbsp) and mix it thoroughly with the egg mixture. The milk will contribute to a wonderfully tender and moist texture for your scrambled eggs. Ensure it’s fully incorporated.

Drain the blanched ham well and dice it into roughly 1cm cubes. The size can be adjusted based on your preference.

Heat a non-stick skillet over medium heat and add the butter (23g or about 1.5 Tbsp). Ensure the heat is not too high to prevent the butter from burning.

Allow the butter to melt completely, coating the bottom of the pan. You’ll notice a wonderful aroma as the butter melts.

Once the butter is fully melted, add the diced ham to the skillet. Make sure to distribute the ham evenly in the pan.

Sauté the ham gently with a spatula or chopsticks for about a minute. This allows the ham to absorb some of the buttery flavor and turn slightly golden brown around the edges.

Pour the prepared egg and milk mixture over the sautéed ham. Immediately reduce the heat to medium-low to ensure the eggs cook gently and don’t overcook.
Step 13
As the eggs begin to set around the edges, use chopsticks or a spatula to gently stir and fold the mixture. Continue to stir softly, creating soft curds and ensuring the eggs cook evenly until they are just set and still moist. Avoid vigorous stirring which can make the scramble tough.
Step 14
When the scramble reaches your desired consistency – fluffy and slightly moist – remove the pan from the heat. Serve immediately onto a plate. Your delicious and fluffy ham and egg scramble is ready!
