A simple and quick recipe for delicious stir-fried eggplant! It’s a real appetite enhancer.
Main Ingredients- 2 eggplants
- 1/4 bell pepper (any color)
- 1/2 onion
- 150g ground beef
- 1/3 green onion
Seasoning & Others- 1/2 Tbsp minced garlic
- 1.5 Tbsp oyster sauce
- 1 pinch of salt
- 1 Tbsp sesame oil
- A little sesame seeds

Cooking Instructions
Step 1
First, let’s prepare the ingredients. Wash the eggplants thoroughly, cut them into 4 pieces lengthwise, and then slice them into bite-sized pieces. Slice the bell pepper and onion into similar lengths as the eggplant. Finely chop the green onion. For the ground beef, marinate it with 1/2 Tbsp of cooking wine and a pinch of pepper; this will make the meat more tender.
Step 2
Heat a pan with a little cooking oil. Add the prepared eggplant slices. Sprinkle a pinch of salt over the eggplant; this helps absorb oil and makes it more flavorful as it fries. Stir-fry quickly over high heat until the eggplant just begins to soften.
Step 3
As the eggplant starts to soften slightly, add the sliced onion and continue to stir-fry. Cooking the onion until it becomes translucent will add a natural sweetness to the dish.

Add the marinated ground beef. Break it up with your spatula to prevent clumping and stir-fry until the beef is fully cooked and has changed color.

Add the minced garlic to enhance the aroma. Then, add the sliced bell pepper and stir-fry everything together. Adding bell peppers makes the dish look more appealing.
