Main Ingredients- 1kg Freshwater eel, cleaned
Glaze Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1/3 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy sauce
- 1 Tbsp Rice wine or Mirin
- 1 Tbsp Plum extract or syrup
- 1/3 Tbsp Ginger syrup or minced ginger (optional, for added aroma)

Cooking Instructions
Step 1
Start with your cleaned freshwater eel. If you ordered it online, it usually comes pre-cleaned and ready to go.
Step 2
Gently scrape the skin side of the eel with the back of a knife or a spoon. This helps to remove any excess sliminess, making the skin crispier when cooked and reducing any potential fishy odor.
Step 3
To prevent the eel from curling up too much while grilling and to ensure even cooking, score the flesh side with cuts about 1 to 1.5 cm apart. These cuts also allow the delicious glaze to penetrate the meat.
Step 4
Preheat your pan over medium heat. Place the eel skin-side down first and grill until it turns a nice golden brown. Cooking over medium heat rather than high heat helps cook the eel through without burning the outside.

Once the skin side is nicely browned, flip the eel and grill the flesh side until it’s cooked through. Avoid flipping too often to keep the juices inside the eel.
