Ingredients

  • 1 cup whole wheat flour (approx. 120g)
  • 3/4 cup water (approx. 180ml)
  • 2-3 Tbsp Gochujang (Korean chili paste, adjust to taste)
  • 1 green chili pepper
  • 1 red chili pepper
  • 1 handful of chives (approx. 30g)
  • 5-6 perilla leaves

Cooking Instructions

First, prepare the fresh vegetables. Wash the green chili pepper, red chili pepper, chives, and perilla leaves thoroughly under running water. It’s good to soak them briefly and then rinse several times to remove any dirt or impurities.

In a bowl, combine 1 cup of whole wheat flour and 3/4 cup of water. Mix until a smooth, slightly thick batter forms, ensuring there are no lumps. Now, add 2-3 tablespoons of gochujang and mix well until it’s evenly incorporated into the batter. You can adjust the amount of gochujang based on its saltiness and your preference.

Finely chop the washed and drained vegetables. Remove the seeds from the green and red chili peppers and chop them finely. Similarly, chop the chives and perilla leaves into bite-sized pieces. Add the chopped vegetables to the gochujang batter and gently mix to distribute them evenly throughout.

Heat a frying pan over medium heat. Add 1-2 tablespoons of brown rice oil or cooking oil to the hot pan. Ladle spoonfuls of the batter onto the pan, forming round, flat pancakes. Ensure the batter isn’t too thick, as it might be difficult to cook through; aim for a moderate thickness. Once one side is golden brown, flip the pancake and cook the other side until golden brown as well. Your delicious Gochujang Jangtteok is ready! It’s best enjoyed while still warm.
