- 110g thick-cut bacon

Step 1
First, cut the bacon into bite-sized pieces, about 1-2 cm wide. Heat a pan over medium heat, then add the cut bacon. Cook until it turns golden brown and crispy, being careful not to burn it, and render out plenty of bacon fat. Searing the bacon first enhances its savory aroma and creates a deeper flavor when stir-fried with the mushrooms.
Step 2
Once the bacon is nicely browned, prepare the enoki mushrooms. Trim off the tough, woody end of the enoki mushroom base. Gently rinse them under running water and shake off excess moisture. Then, separate the mushrooms into smaller clusters by hand, about 2-3 stems together. After lightly patting them dry, add them directly to the pan with the cooked bacon. Now, add 1 tablespoon of oyster sauce and a pinch of black pepper to your preference. The oyster sauce will add umami depth, while the pepper will enhance the overall aroma.
Step 3
Turn the heat up to high and quickly stir-fry all the ingredients together until well combined. Cook for about 1-2 minutes, just until the enoki mushrooms soften slightly and the flavors of the bacon and oyster sauce are evenly distributed. Be careful not to overcook, as the enoki mushrooms can become too soft. Transfer the delicious stir-fry to a serving plate. This dish is best enjoyed hot off the pan!
