Discover how to easily make healthy and easily digestible radish rice using your pressure electric rice cooker, featuring seasonal radishes and aromatic shiitake mushrooms. Enjoy a rich flavor profile with this simple one-pot meal.
Main Ingredients- 300g Radish (Choose fresh, sweet radishes)
- 1.5 cups Soaked Rice (Soak rice in water for about 10 minutes beforehand)
- 3 Shiitake Mushrooms (Can be substituted with other mushrooms like king oyster mushrooms, to your preference)
- 100g Soaked Beans (Use soaked peas, chickpeas, etc. Can be omitted if unavailable)
- 1 Tbsp Sesame Oil (Adds a nutty aroma)
Seasoning Sauce Ingredients- 5 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 1 Tbsp Plum Extract (Adds sweetness and umami)
- 1 Tbsp Sesame Oil (For finishing and fragrance)
- 1 Tbsp Chopped Scallions
- 1 Tbsp Toasted Sesame Seeds (Can grind whole sesame seeds for better aroma)
- 5 Tbsp Soy Sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 tsp Minced Garlic
- 1 Tbsp Plum Extract (Adds sweetness and umami)
- 1 Tbsp Sesame Oil (For finishing and fragrance)
- 1 Tbsp Chopped Scallions
- 1 Tbsp Toasted Sesame Seeds (Can grind whole sesame seeds for better aroma)
Cooking Instructions
Step 1
First, wash and peel the radish. Julienne it into strips about 0.5 cm thick (less than the width of two fingers). Wash the shiitake mushrooms lightly under running water and slice them into bite-sized pieces, about 0.5 cm thick. Rinse the rice and soak it in cold water for about 10 minutes. Drain the water thoroughly.
Step 2
Spread the julienned radish evenly across the bottom of your pressure electric rice cooker’s inner pot. Placing the radish at the bottom allows it to steam and soften as the rice cooks, releasing its natural sweetness and creating a rich, savory flavor.
Step 3
On top of the radish layer, spread the 1.5 cups of soaked rice evenly. Arrange the sliced shiitake mushrooms attractively on top of the rice. Add the soaked beans as well (you can omit the beans if they are not available).
Step 4
Now, let’s add the cooking water. Use slightly more water than you normally would for plain rice. Add 1 tablespoon of sesame oil to 1 cup of water (approximately 120ml) and pour it into the rice cooker. The sesame oil will enhance the savory flavor of the radish rice. Press the ‘White Rice’ or ‘Mixed Grains’ cooking button on your rice cooker.
Step 5
While the rice is cooking, let’s prepare the delicious seasoning sauce to mix with the radish rice. In a bowl, combine 5 tablespoons of soy sauce, 1 tablespoon of gochugaru, 1 teaspoon of minced garlic, 1 tablespoon of plum extract, 1 tablespoon of chopped scallions, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. Mix everything well until combined. You can adjust the soy sauce or add a pinch of sugar to your taste.
Step 6
The fragrant aroma signals that your radish rice is ready! Spoon a generous amount of the prepared seasoning sauce over the hot radish rice. Gently mix the rice and sauce together until well combined. Transfer to a serving bowl for a visually appealing and incredibly flavorful bowl of nutritious radish rice.
Step 7
This delicious radish rice is also fantastic when wrapped in seaweed (kim)! Place a generous portion of the radish rice onto a sheet of crisp seaweed, roll it up, and enjoy a mouthful.
