Main Ingredients- 2 cups Tteokguk tteok (rice cake soup slices, approx. 200g)
- 2 large eggs
- 1/2 medium onion (or 1 small onion)
- 1/2 bunch chives (approx. 20g)
- 1 Tbsp butter (optional)
- 2 Tbsp cooking oil
Seasoning- Pinch of salt

Cooking Instructions
Step 1
Before you begin cooking, please prepare all the necessary ingredients. You can adjust the amount of onion based on its size. Butter adds a wonderful richness, but it’s okay to omit if you don’t have it.
Step 2
Rinse the rice cakes in a colander and soak them in warm water for about 10 minutes. This will soften the rice cakes, preventing them from breaking when stir-fried and ensuring a tender texture.
Step 3
Wash the chives thoroughly, then finely chop them into pieces about 1cm long. The fresh aroma of chives will add a wonderful flavor to your egg and rice cake stir-fry.
Step 4
Peel the onion and slice it into rounds about 0.5cm thick. Be careful not to slice them too thinly, as they can burn quickly during stir-frying.

In a bowl, crack the 2 eggs and add about two pinches of salt. Whisk them well with a fork or whisk to create the egg mixture.

Add the pre-chopped chives to the egg mixture and gently combine. The green color of the chives will beautifully disperse throughout the egg.

Pour the egg mixture with chives evenly over the stir-fried rice cakes and onions. Gently tilt the pan to ensure the egg mixture spreads out. Immediately reduce the heat to low.

Cover the pan with a lid and let it cook on low heat for about 2 minutes, or until the egg is set. When you lift the lid, you’ll see the softly cooked egg.
