  • 2 Tbsp plum extract (maesil-cheong)
  • 2 Tbsp cooking wine (mirin)
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1 Tbsp rice wine for cooking (or 1/2 tsp grated ginger)
  • 1 tsp ginger powder
  • 1 Tbsp minced garlic
  • Pinch of black pepper
  • Drizzle of sesame oil

First, let’s marinate the duck meat. In a bowl, combine 500g of duck meat with a pinch of black pepper, 1/2 Tbsp sugar, and 1 Tbsp cooking wine. Mix well with your hands. This step helps to tenderize the duck and remove any gamey odors.

While the duck is marinating, let’s prepare the soy sauce marinade. In a separate bowl, whisk together 4 Tbsp soy sauce, 2 Tbsp plum extract, 1 Tbsp cooking wine, 1/2 Tbsp sugar, 1 Tbsp corn syrup, 1 Tbsp rice wine for cooking (or 1 tsp ginger powder), and 1 Tbsp minced garlic. Mix until well combined.

Peel 2-3 potatoes and slice them thinly, about 0.5 cm thick. These will add a lovely sweetness and texture when stir-fried with the duck.
