Easy Recipe for Dried Radish Greens Stir-fry with Perilla Seeds
This stir-fried dried radish greens (siraegi namul) boasts a wonderfully savory and nutty flavor, making it a delightful side dish. Rich in dietary fiber, it’s excellent for preventing constipation and a great addition to a healthy diet. We’ve added perilla powder for an extra layer of deliciousness, creating a dish that’s both nutritious and satisfying.
Main Ingredients- 320g boiled dried radish greens (siraegi)
- 2 Tbsp chopped green onion
- 1 Tbsp minced garlic
- 2 Tbsp anchovy-based soy sauce (eoganjjang)
- 1.5 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp perilla oil

- 2 Tbsp ground perilla seeds (perilla powder)

Cooking Instructions
Step 1
Prepare 320g of boiled dried radish greens (siraegi). Remove any tough outer skins from the radish greens, then chop them into bite-sized pieces, about 2-3 cm long. (I used pre-soaked and boiled radish greens. If you have a different preferred method for boiling dried greens, feel free to use it.)
Step 2
Finely chop the white parts of the green onion to yield about 2 tablespoons. The amount of green onion and garlic can be adjusted to your preference, but using too much might overpower the natural flavor of the radish greens, so a moderate amount is recommended.
Step 3
Prepare 150ml of anchovy broth. This broth will help make the stir-fry moist and flavorful. Using broth instead of plain water will add a richer depth of flavor. (Rice water can also be used as a substitute.)
Step 4
In a wide pan, combine the chopped radish greens, 2 Tbsp chopped green onion, 1 Tbsp minced garlic, 2 Tbsp anchovy-based soy sauce, and 1 Tbsp perilla oil. Gently mix and knead with your hands to ensure the seasonings are evenly distributed throughout the greens.
Step 5
Let the seasoned radish greens sit for about 5-10 minutes. This resting period allows the flavors to meld and penetrate the greens, resulting in a deeper taste.
Step 6
Place the well-seasoned radish greens in a wide pan over medium-high heat and stir-fry. Cook until steam starts to rise and the greens appear slightly dry. This process concentrates the flavors as moisture evaporates.
Step 7
Pour in the 150ml of anchovy broth and reduce the heat to medium. Continue to stir-fry until the greens are nicely moistened. As the broth reduces, it infuses the radish greens with delicious umami.
Step 8
If the radish greens still feel tough, lower the heat to low, cover the pan with a lid, and let them steam for 5-10 minutes. (In my case, the greens were already tender, so I skipped this steaming step and simply cooked until the broth was slightly reduced.)
Step 9
Taste the dish and add a pinch of salt if needed to adjust the seasoning. Turn off the heat, then stir in 2 Tbsp of ground perilla seeds (perilla powder) and 1.5 Tbsp of perilla oil. Mix well until everything is evenly incorporated. Your delicious and nutty dried radish greens stir-fry is ready to be enjoyed! Serve it over warm rice for a delightful meal.
