Main Ingredients- 1 handful dried pollack threads (about 20-30g)
- 1 handful bean sprouts (about 100g)
- 1/2 block firm tofu (about 120g)
- 1/4 large green onion
- 4 Tbsp commercial anchovy-kelp broth (or water)
- 1 Tbsp minced garlic
- 2 Tbsp perilla oil
- 3.5 cups water (about 700ml)
Cooking Instructions
Step 1
Prepare all the ingredients for your delicious Dried Pollack and Bean Sprout Soup. Ensure the dried pollack is softened, the bean sprouts are fresh, and the tofu and green onion are cut into bite-sized pieces.
Step 2
Briefly soak the dried pollack threads in cold water for about 1 minute until they soften slightly. Rinse them gently and squeeze out excess water. Be careful not to soak them for too long, as this can diminish their flavor. Cut the pollack into manageable pieces with scissors. Dice the tofu into roughly 1.5cm cubes and slice the green onion diagonally.
Step 3
In a pot, combine the prepared dried pollack threads, minced garlic, and 2 tablespoons of perilla oil. Sauté over low heat for 2-3 minutes, stirring gently to prevent burning. This step helps to release the aromatic essence of the dried pollack and perilla oil.
Step 4
Pour in 3.5 cups of water and 4 tablespoons of anchovy-kelp broth to the sautéed pollack. Bring the mixture to a boil over high heat, then reduce the heat to medium-low and simmer for 5 more minutes to develop a flavorful broth. Add the bean sprouts and cook, covered, over medium heat for 3 minutes. Covering the pot while the bean sprouts cook helps to prevent any unpleasant raw smell.
Step 5
Finally, add the diced tofu and sliced green onion to the pot. Simmer gently for about 2 more minutes, taking care not to break up the tofu. Taste the soup and adjust the seasoning with Korean soup soy sauce or salt, if needed.
