Today, we’re making a simple yet deeply satisfying nutritious porridge! It’s called ‘Doenjang Tofu Nurungji Porridge.’ The name might sound a bit unusual, and you might wonder about its taste, but I tried it because it felt so healthy and wholesome. Give it a go!
Ingredients- 1/2 block soft tofu
- Nurungji (scorched rice crusts, your desired amount)
- 1 Tbsp Doenjang (Korean soybean paste)
- Sesame oil, to taste
- Sesame seeds, for garnish
Cooking Instructions
Step 1
First, bring about one cup of water to a boil in a pot. Once boiling, add 1 tablespoon of Doenjang and stir well to dissolve it into the water. Dissolving the Doenjang first prevents clumps and results in a smoother porridge.
Step 2
As the Doenjang-infused water comes to a boil, add your desired amount of Nurungji. Allow the Nurungji to absorb the liquid and soften. Stir occasionally to prevent it from sticking to the bottom of the pot.
Step 3
Once the Nurungji has softened considerably, add 1/2 block of soft tofu. You can either mash it slightly with a spoon or cut it into small cubes. The tofu will simmer and blend beautifully into the porridge.
Step 4
When the porridge has thickened to your liking and the Nurungji is well-broken down, creating a soft texture, drizzle in some sesame oil for a nutty aroma. It’s best to add the sesame oil after turning off the heat to preserve its fragrance.
Step 5
Ladle the finished Doenjang Tofu Nurungji Porridge into a bowl. Garnish generously with sesame seeds for an extra touch of flavor and visual appeal. Enjoy this incredibly nutritious and delicious porridge while it’s warm!
