Cooking Instructions

First, prepare all your vegetables. Finely dice the onion and carrot into about 3-5mm pieces. Chop the scallion into small pieces. Mince or thinly slice the garlic. Gently shred the crab sticks lengthwise. In a small bowl, whisk the egg with a pinch of sugar and a pinch of salt. Having everything prepped makes the cooking process much smoother.

Now, let’s start stir-frying. Heat a generous amount of cooking oil in a pan over medium-low heat. Add the sliced garlic and chopped scallions and sauté until fragrant and the garlic turns lightly golden. Then, add the diced onion and carrot and increase the heat to medium. Stir-fry until the vegetables become translucent, being careful not to burn them.

Once the vegetables are partially cooked, clear a space in the center of the pan. Pour 1 tablespoon of soy sauce directly into this cleared space. Let it bubble and caramelize slightly; this step adds a deeper, richer flavor to the fried rice.
