Easy Yet Hearty Rolled Omelet with Chives
A recipe for Ibs lunch box, featuring a simple yet satisfying rolled omelet with chives. The fragrant chives and tender eggs combine for a delicious and nutritious dish, perfect for breakfast or as a side in your lunchbox!
Main Ingredients- 2 stalks fresh chives (approx. 30g)
- 2 fresh eggs
Seasoning & Others- 1/2 tsp fine salt

Cooking Instructions
Step 1
Crack the 2 eggs into a bowl. Remove the chalaza (the stringy white part) and gently whisk until smooth using a fork or a whisk. It’s important to whisk the eggs thoroughly to avoid lumps.
Step 2
Add 1/2 tsp of fine salt and a pinch of black pepper to the whisked eggs and mix well. Wash the chives, pat them dry, and finely chop them into pieces about 0.5cm long. Add the chopped chives to the egg mixture and stir lightly to distribute them evenly. Your seasoning is ready!
Step 3
Heat a non-stick frying pan over medium-low heat and add 1/2 Tbsp of cooking oil. Pour a thin layer of the egg mixture to cover the bottom of the pan. Once the edges begin to set, gently stir the egg with chopsticks or a spatula, as if scrambling, until about 70% cooked. This helps create a tender texture without the omelet becoming dense.
Step 4
When the egg is about 70% cooked, use chopsticks or a spatula to carefully start rolling the omelet from one end of the pan. It’s best to roll it only once or twice to maintain a neat shape. As you roll, gently push the rolled omelet to one side to create space for the next addition of egg mixture.
Step 5
Once rolled, move the omelet to one side of the pan. Pour more of the remaining egg mixture into the cleared space. Once the new egg mixture is partially set, lift the rolled omelet and fold it over the new layer. Repeat this process 1-2 more times, building up a thick and appetizing rolled omelet. Rotate the omelet to cook the sides evenly until golden brown for an even more delicious result.
Step 6
Slice the finished rolled omelet into bite-sized pieces (about 1.5cm thick) and arrange them attractively on a plate. The vibrant green chives scattered throughout make for an appealing and appetizing dish. Another simple and delicious meal for your Ibs lunch box is ready!
